As I said, our summer was full of basic meats but fantastic sides. This one was an accidental super star, I wasn’t expecting the fanfare it was met with! In my market, the “season” is short for real, homegrown veg. The seasons we do have are fairly short, so one has to act fast to get the most bestest stuff. This summer I got lucky and stumbled across some fresh corn. I have the fake teeth and can’t enjoy corn on the cob so I make due with all manner of corn salads. Now that it is winter I will get to make the corn chowder and I can’t wait!
This is another fairly simple and straightforward kind of salad. I say kind of salad because it doesn’t have lettuce. That seems to be what most folks associate with the title “salad”. For me, a salad is a bunch of chopped things in a bowl. It has some version of dressing. That is what this is, chopped things in a bowl. I will start with a basic recipe as per usual but remember my rule, let your imagination guide you!
First, the ingredients.
1/4 cup olive oil
3 avocados diced
2 cups cherry tomatoes cut in half-grape or seeded roma tomatoes will work
2 english cucumbers
1 jalapeno
1 cup corn off the cob
3 tbsp lemon juice, 1/4 cup olive oil, 1/3 tsp cumin, salt, black pepper and fresh chopped cilantro
Combine tomatoes, corn, diced avocados, cucumber and jalapeno in one bowl and kiss them with salt and black pepper. In another bowl mix the lemon juice, cumin, salt and pepper to make a dressing. Pour the dressing over the veg and toss until evenly coated. Pop it into the fridge for about 30 minutes before serving.
Super simple and super tasty! Happy cooking!
Note: I add a sprinkle of MSG and a touch of red wine vinegar to bring out the bright flavors.
