It seems like ages ago that it was warm and the sunshine lasted for more than 6 hours a day. I do miss those days but thanks to modern markets I can feed us those summer dishes year round! This summer I decided to focus more on the side dishes than the mains and this required research. I found every magazine and cookbook that had a section on side dishes and I read them cover to cover so I could stray from the old standards with confidence.
The old standards: potato salad, macaroni salad, pasta salad and coleslaw. I didn’t quite conquer them all but I got pretty darn close. We had planted tomatoes this year so they were the main ingredient in almost everything I made. Is there anything better than a home grown tomato? I appreciate that anything home grown is better than store bought but those tomatoes are the tip top!
I will take us thru all of the fun side dishes one at a time. I understand that it is winter. However, we can still have these dishes. We can add a few extra things that are already in our pantry to make them feel fresh!
I’m going to hit you with the list!
Tomato Salad
Avocado Corn Salad
Caprese Avocado Boats
Basil, Feta and Corn Salad
Greek Salad
Cucumber Salad
Hawaiian Macaroni Salad
Grapefruit and Goat cheese Fennel Salad
Tomato sandwich with Herbed Goat Cheese
Pear Salad
So many side dishes!! It’s a celebration of veggies!! It’s a celebration of the garden!!
Stay tuned and Happy cooking!
