We are going back to our summer salad state of mind. This is one of my favorites as it combines fresh tomatoes and corn. Is there anything better than a fresh veg salad? I don’t think so. This is probably the easiest of all the salads as well as being tasty!
4 cups fresh corn removed from the cob
1\4 cup finely chopped red onion
1 cup cherry or grape tomatoes
1\3 cup crumbled feta cheese
1\4 cup thinly sliced basil- think ribbons of basil
3 Tbsp olive oil
Juice of 1 lime
Salt and pepper
Throw all of the ingredients into a bowl, toss them around, taste them to see if you need to add more S&P and serve.
It can’t get much more simple! There is prep work but it is minimal and it will give you maximum flavor.
If feta isn’t your favorite cheese it can be swapped for bleu or cheddar or cotija or cheddar jack or any cheese you do like! Feta has a mild flavor and a bit of salt so it compliments the dish without being the star of the show. If like me you are deep into the winter season and have a craving for fresh, sexy sides you could use frozen corn. If you are living an eternal summer you can grill the corn. If you are vegan you can skip the cheese or use an alternative. If you are feeling frisky you can use a pickled red onion or if you are feeling lazy you could use a green onion, the point is to get the spicy bite of an onion.
This could also be made into a more complete meal with the addition of meat. I would add grilled chicken or skirt steak. It could be turned into a topping for pork or fish. I wouldn’t add ground meat to it but it could be a taco/enchilada/nacho topping.
I know I laid out a plan of what all I had made over the summer but I want to throw in some things I wish I had made or I made different from the printed recipe.
